Terrifically Tasty Beef Satay

If you're anything like me then you love the occasional take-out. It was mostly a Chinese every Friday or Saturday in our house. One of my favourite dishes was always a satay, only problem is that's it's loaded with calories. So, when I started my slimming journey I made it my mission to make a satay just as good, no, actually better than I could get from my local take-out. So, here it is, in all it's glory, my terrifically tasty beef satay.
What you'll need :
Recipe based on 2 people
- 2 x Lean Beef Medallions
- Veg (Use whichever veg you prefer, I like the following) Mange-tout, Green Beans, Scallions, Fresh Red Chilli
- Rice (whichever kind you prefer)
For the Sauce
- 1x Can of Zero Sugar Coke
- Dark Soy Sauce
- 1-2 Tablespoons of Peanut Butter
- 1-2 Tablespoons of Mayflower Curry Sauce (I use the sas it's a slimmers sauce, if you can't get it you should be able to fins a similar slimmer / low fat alternative)
- Garlic Granules
- Paprika
- Chili Flakes
- Ginger (optional) I use the Squeezable one (in a tube)
- Worcester Sauce
- Salt
How to make :
Dust off your wok, throw the veg in with a little soy sauce and cook until tender. Then take out and put to the side.
Next up, add all the sauce ingredients -
Coke, 1 tablespoon of garlic granules, 2 tablespoons of soy sauce, tablespoon of paprika, squirt of ginger, 1 / 2 tablespoons of curry sauce, 1 / 2 table spoons of peanut butter (1 for light taste and 2 for strong, tablespoon of worcester sauce, Chile flakes (add to your own taste, I like it spicy), and a pinch of salt.
Stir all of these ingredients together in the wok and bring to the boil, it will go nice and thick, if you need to add a dash of almond milk or water.
Next, fry up your steaks on a separate flying pan. I like mine rare so only a quick blast on each side.
Add your veg into the wok with your sauce.
Get your rice ready, add to the plate / bowl. Slice up your steak and then add the strips on top of the rice, and lastly pour on your sauce and veg.
